At an elevation of 350 meters above sea level, the Vigna del Pellegrino vineyard has extended alongside the historic Via Francigena since 1971. Here, the terroir consists of light-colored sandy soil rich in pumice, basalt, and tuff.

The grapes are destemmed and crushed, then left in overnight skin contact with the must. After pressing, fermentation occurs spontaneously in 500-L French oak barrels. Following fermentation, the wine is aged in the same vessels for approximately 12 months. All wine handling operations are carried out in accordance with lunar cycles.
